I can remember this cake through the years – when my sister made it for Dad for his birthday to when my mom and aunties would make it for our high school birthdays all the way back to the years in the land before time when I had Wendy ringlets and utility bills and rent checks were something I had n’er dreamed of. Grandma’s classic Chocolate Cake. Really, Classic Chocolate Birthday Cake. I think if one of the grandchildren wanted a chocolate cake of any stripe, this is what they got. And it’s delicious, so probably few complaints were ever lodged. Straight from the handwritten recipe book she gave my mother with famously few instructions, I share:

Just classic. Serve for a birthday. Or a decadent Sunday morning.
Ingredients
- CAKE
- 2 c sugar
- 1 c vegetable oil
- 2 eggs
- 2.5 c flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1 c buttermilk
- 5 tbsp cocoa powder
- 2 tsp baking soda
- 1 c hot water
- 1 tsp vanilla
- FOR FROSTING
- 1 lb confectioner’s sugar
- 1/2 c cocoa powder
- 1/3 c softened butter
- 1/3 c boiling water
- 1/4 tsp salt
- 1 tsp vanilla
Instructions
- CAKE:
- Blend all ingredients.
- Bake @ 350 degrees F for 30-35 minutes.
- FROSTING:
- Blend.
- Frost.
